key lime cheesecake with strawberries and blueberries

Birthday season is upon me. It seems I can only befriend Tauruses and Geminis. It makes sense, the Tauruses keep things steady and loyal while the Geminis spice up my rather fret-y and practical Virgo disposition. My good friend Jen's birthday on May 13th is the kick-off point, so I decided to go big. If anyone deserves some extra effort it's this girl. She loves key lime pie and cheesecake and I found a recipe that included both. Why not?

It was my first time making a cheesecake, so I was a little nervous but I hear it turned out alright. I had to drive to Des Moines this weekend (for another birthday party), so I wasn't able to try it. But don't feel too bad for me, I'm going out to dinner with Jen tonight and she promised to give me a piece afterward.*

The recipe called for mango ribbons, but that sounded incredibly hard with such a slippery fruit and also I just wasn't sure if Jen like them, so I opted for blueberries and strawberries instead. Feel free to try whatever. Also, I used bottled Key lime juice.

*Update: I did get to try the cheesecake and it was awesome. The crust turned out to be my favorite part, but I definitely recommend making this recipe.

Key Lime Cheesecake with Blueberries + Strawberries 

lightly adapted from Gourmet/May 2002


For crust
1 1/4 cups fine graham cracker crumbs (5 oz)
3 tablespoons sugar
1/2 stick (1/4 cup) unsalted butter, melted

For filling
2 (8-oz) packages cream cheese at room temperature
1 cup plus 2 tablespoons sugar
3/4 cup fresh Key lime juice (strained from about 1 1/2 lb Key limes) or bottled
1/2 cup sour cream
1/2 teaspoon vanilla
2 1/2 tablespoons all-purpose flour
1/4 teaspoon salt
3 large eggs

For topping
1/2 c blueberries

1/2 c strawberries, sliced 1/8"
1 tablespoon fresh Key lime juice (strained) or bottled
1/2 cup chilled heavy cream
1 tablespoon sugar

 
Make crust:
Preheat oven to 350°F and butter bottom and side of 9"-9 1/2"spring-form pan.
Stir together crumbs, sugar, and butter in a bowl with a fork until combined well, then press evenly onto bottom and one-third up side of pan. Bake crust in middle of oven 8 minutes and cool in pan on a rack.
Make filling:
Reduce oven temperature to 325°F.
Beat cream cheese with an electric mixer at medium speed until fluffy, then beat in sugar. Add lime juice, sour cream, and vanilla and beat until smooth. Mix in flour and salt at low speed, scraping down side as needed, until just incorporated, then add eggs all at once and mix just until incorporated.
Pour filling into crust and set springform pan in a shallow baking pan. Bake cake in middle of oven until set in center, 1 hour to 1 hour and 10 minutes. Cool completely in springform pan on rack. (Cake will continue to set as it cools.)
Run a thin knife around edge of cake and remove side of pan. If desired, transfer cake with a large metal spatula to a serving plate.
Make topping:
Gently toss blueberries + strawberry slices with lime juice.
Beat cream with sugar in a bowl until it just holds stiff peaks, then spread over top of cheesecake. Arrange fruit decoratively over cream.

birthday cake!!

Last Monday was Matt's birthday. We both took the day off, went for a ride on the Tall Ship Windy in Lake Michigan, sat in Millennium Park for the free Ponys show, drank vodka tonics and went out for Thai food. All in all it was pretty great.

Somewhere in there I made a cake. Because you just can't let someone have a birthday without cake! Not even if, say, you're a really awful baker with no electric mixer. Or if the birthday boy works in a delicious bakery, making it a little intimidating. Or even if last year the two of you ended up taking the flat, awful, wreck of a cake you tried to make for him and throwing it out the window at parked cars.

So I sucked it up, did a lot of research, and used a Smitten Kitchen recipe since I know those always turn out awesome. And it worked!  The sour cream frosting was a little... sour. But after we put it in the fridge and it hardened into more of a fudgey texture I really enjoyed it.

Best Yellow Layer Cake
4 cups plus 2 tablespoons cake flour (not self-rising)
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
2 cups sugar
2 teaspoons pure vanilla extract
4 large eggs, at room temperature
2 cups buttermilk, well-shaken


Preheat oven to 350°F. Butter two 9-inch round cake pans and line with circles of parchment paper, then butter parchment.


Sift together flour, baking powder, baking soda, and salt in a medium bowl. In a large mixing bowl, beat butter and sugar in a large bowl with an electric mixer at medium speed until pale and fluffy, then beat in vanilla. Add eggs 1 at a time, beating well and scraping down the bowl after each addition. At low speed, beat in buttermilk until just combined (mixture will look curdled). Add flour mixture in three batches, mixing until each addition is just Incorporated.

Spread batter evenly in cake pan, then rap pan on counter several times to eliminate air bubbles. (I like to drop mine a few times from two inches up, making a great big noisy fuss.) Bake until golden and a wooden pick inserted in center of cake comes out clean, 35 to 40 minutes. Cool in pan on a rack 10 minutes, then run a knife around edge of pan. Invert onto rack and discard parchment, then cool completely, about 1 hour.

Chocolate Sour Cream Frosting
Adapted from The Dessert Bible


15 ounces semisweet or bittersweet chocolate, chopped
1 1/4 teaspoons instant espresso (optional, but can be used to pick up the flavor of average chocolate)
2 1/4 cups sour cream, at room temperature
1/4 to 1/2 cup light corn syrup
3/4 teaspoon vanilla extract


Combine the chocolate and espresso powder, if using, in the top of a double-boiler or in a heatproof bowl over simmering water. Stir until the chocolate is melted. (Alternately, you can melt the chocolate in a microwave for 30 seconds, stirring well, and then heating in 15 second increments, stirring between each, until the chocolate is melted.) Remove from heat and let chocolate cool until tepid.

Whisk together the sour cream, 1/4 cup of the corn syrup and vanilla extract until combined. Add the tepid chocolate slowly and stir quickly until the mixture is uniform. Taste for sweetness, and if needed, add additional corn syrup in one tablespoon increments until desired level of sweetness is achieved.

Let cool in the refrigerator until the frosting is a spreadable consistency. This should not take more than 30 minutes. Should the frosting become too thick or stiff, just leave it out until it softens again.

birthday pizza party!



Ok not really. But it was recently my birthday and I got a bunch of really great gifts-all of which were total surprises. Do you see a theme here?
  • Johnny sent me a song that sounds like Daft Punk wishing my a happy birthday
  • Sarah made me an amazing cake that I have now had for breakfast five days in a row, not to mention homemade salsa and jams
  • Todd made me a sign that says "I (heart) mayo"
  • Jen gave me pretty white dishes to take food pictures on (you will be seeing a lot of them)
  • Heather made me cookies; Sophie made me blondies
  • Matt gave me a baking stone, a cookbook, and a bread machine!
I have no idea how I got so lucky, but I'm really very thankful for it.

So having listened to my song about ten times on repeat, and finally finally wanting something other than sweets for a meal, I decided to make a pizza, dough and all! And it actually turned out really yummy. I used a Cooks Illustrated dough recipe and hijacked a Bon Appetit toppings recipe and I shall call the concoction "28 is Great... for PIZZA". Ok, I'll work on the name, but really the recipe is good.


28 Is Great... for PIZZA
(or caramelized onion & mushroom pizza)

dough (via Cooks Illustrated)

1 3/4 cups water , warm (about 105 degrees)
1 envelope rapid-rise dry yeast
1 tablespoon granulated sugar
2 tablespoons olive oil
4 cups unbleached all-purpose flour , plus extra as needed
1 1/2 teaspoons table salt

Vegetable oil (or cooking spray) for bowl

Instructions

1. Set oven to 200 degrees for 10 minutes, then turn oven off.

2. Meanwhile, in bowl of food processor fitted with either metal or plastic blade, add water and sprinkle in yeast and sugar. Pulse twice to dissolve yeast. Add all remaining ingredients and process until mixture forms cohesive mass. Dough should not be sticky (if it is, add 2 more tablespoons flour and pulse briefly) nor should it be dry and crumbly (if it is, add 1 more tablespoons water and pulse briefly). Let rest for 2 minutes. Process for another 30 seconds.

3. Remove dough from food processor and knead by hand on floured work surface for 1 minute or until dough is smooth and satiny (dough will feel a bit tough at this point).

4. Very lightly oil large bowl with vegetable oil or cooking spray. Place dough in bowl (do not coat dough with oil) and cover with plastic wrap. Let rise for 40 minutes or until doubled. Remove from bowl, punch down, remove from bowl and separate into two round pieces. Let rest for 10 minutes under damp dish towel, then shape according to illustrations below, and add toppings.

5. Proceed to cook topped pizza in preheated 500-degree oven using the following guide to determine cooking time for pizza crust with topping but without cheese. All pizzas need to be cooked an additional two or three minutes after adding cheese, or until cheese is completely melted.

Toppings (adapted from Bon Appetit)
  • 3 tablespoons extra-virgin olive oil
  • 3 large onions, thinly sliced
  • 8 oz mushrooms, trimmed and thinly sliced
  • 1 (5-oz) package Boursin garlic-herb cheese
Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook onions with 1/2 teaspoon salt and 1/4 teaspoon pepper, uncovered, stirring occasionally, until softened and beginning to brown, about 10 minutes. Reduce heat to moderate and continue to cook, stirring occasionally, until tender and golden, about 15 minutes more. Add mushrooms, reduce heat to low and continue to cook, stirring occasionally, until very soft and deep golden brown, about 15 minutes more. Remove from heat and cool to warm, about 10 minutes.
