desperate measures

I have been cooking, I swear. I just fell into a rut where I basically ate spaghetti with kale, or lemon risotto, or crispy black bean tacos and that's about it. There just hasn't been much time or desire for experimenting lately, thus no new posts.

But now it's really cold and I've been having a bit of a cooking challenge: what can I make without leaving my apartment AND can be considered a meal? Some attempts are more noble than others. I do know now that coleslaw mix with a green onion, olive oil, red wine vinegar, and an array of spices is actually ok. Ugly, but ok. Also, almond butter is not a meal. It is delicious but will never seem to fill you up, just give you a stomach ache.

And so this is how I ended up making red lentil hummus. I doubt I'll ever make it again. The texture kind of grosses me out and regular hummus is so much better. But in case you've got the ingredients and don't want to leave the house for something better, here you go. And why yes, that IS homemade bread. That part was delicious, thank you. So much so that Matt told me, "This is really good! It tastes like actual bread." ... I chose to take it as a compliment.

Red Lentil Hummus
(via Chow.com)

Ingredients-

2 cups water

1 cup dried red lentils

2 medium garlic cloves, finely chopped

3 tablespoons tahini

5 tablespoons olive oil (I used much less and just added more lemon juice)

1/4 cup freshly squeezed lemon juice

2 teaspoons kosher salt

1/4 teaspoon freshly ground black pepper
  1. Heat water in a small saucepan over high heat until boiling. Add lentils and reduce heat to low. Simmer until almost all of the liquid has been absorbed, about 15 minutes. Drain through a fine mesh strainer and let cool to room temperature, about 20 minutes.
  2. Place lentils, garlic, and tahini in the bowl of a food processor fitted with a blade attachment and pulse until lentils are broken up, about 10 pulses.
  3. With the motor running, add oil, lemon juice, salt, and pepper and blend until evenly incorporated, about 30 seconds. Scrape down the sides of the bowl and blend for 40 seconds more or until smooth.

meh.

I thought this recipe was going to be awesome, but really it was just bland. Hopes were up, then promptly crushed.

banana bread

On Saturday morning I made banana bread. It was/is really yummy. Then I spent the rest of the day being violently ill from what I can only guess is the mayo I'd made and ate the day before. So I'm going to go ahead and call both mayo attempts a good solid fail. I got to be honest, I don't think I'm going to make a third attempt. I think I'm going to go cralwing back to Hellman's in hopes that it'll forgive me.

unuggggh

No Mary-Claire, there is absolutely no reason to put three chipotle chilies in your milk-less Kraft mac & cheese. It will not make it taste any better, it will just make you really glad you live by yourself for the rest of the night.

No picture for this one. It was gross and I'm embarrassed I ate it. Being broke and digging into your Costco impulse purchases is more dangerous than previously believed.

an ok egg

At my mom's insistence I tried to poach another, better egg. I tried salting the water like Sarah suggested, used a slotted spoon (which I'm embarrassed to say I had not thought of before), and put some vinegar in the cup i cracked the egg into to help it stay together more.

This one turned out a lot better. It was still a bit runny, but I'm getting there. I just need to cook it longer I think.

In other news, I made a pasta sauce last night that tasted exactly like barf. It even had the same texture and looked like it. Win some/lose some I guess.

your brain on drugs, poached, and served on toast

I tried to poach an egg for the first time today. Generally I avoid dealing with them, seeing as we have a horrible, runny, and sometimes stomach-achey history. I don't really understand it. I mean, college guys can cook eggs, so what exactly am I missing here? An adams apple? A Miller Light?

But today I couldn't avoid it. I'm broke and have little to no groceries, so it was time to get creative. I called my mom and had her walk me through it. It sounded easy enough, but I don't think I cooked it long enough and apparently should have salted the water? Any tips? Please??

Also, I've really become fascinated with eggs on pizza. Has anyone tried this?
